The few turns (tight) that lead to Valbonne reveal a small "jewel" of table that we decided to go back on the "grill" in early November. This, in particular, one of these culinary brands whose names immediately come to mind, one of those that refer to this area and we have (very) great pleasure to share, and disclose ! The hardiness of the product combined with the workmanship makes it a very "refined" ! The foie gras with port sliced fig jam and toast, do not tape our taste buds, still "alive" in the persistent memory of a previous test! Faithful and equal to himself, he will, however, remained!
Bagels (Jewish specialty) foie gras, apple and roasted duck breast develop all its strengths in sweet and sour, and conclude with a masterful display of fireworks of flavors. Roasted salmon skin with sesame seeds reveal a perfect 'control' firings! A fondant inimitable, salmon breaking away from the skin with an ease not fake! Duck breast with apple cider toast will make a point of honor to "plead" for a most excellent product, (hyper) pink slices of caramelized apples and sauce suitable. The lobster risotto will "magnify" unequivocally a lobster in its best form, and its forms! The appearance sweets remind us that our leaders "work" together and it is not impossible to be efficient from the beginning to the end of the feast. The soft-flowing heart Toblerone chocolate, vanilla ice cream (very runny) reconcile any refractory to the famous cocoa bean! The soft caramel, vanilla ice cream, a large and delicious novelty of recent weeks have me more convinced than its predecessor because perhaps this casting caramel (slightly) salty warm damn all the Saints! The roasted pineapple with sugar, lemon ice, would, in turn, deserve to suffer a roasting further, more insidious! The pear crumble with cinnamon will announce at the outset, color, with an alliance idyllic pears slightly caramelised biscuit crumbs. I bet that, soon, one of my "colleagues" whose purpose seems to be summed awarded or subtracted depending on the mood of the stars of the moment, will recognize and reward the real talents of this pair of Heads (hyper) gifted!
